What's Actually in Your Sea Salt? Heavy Metals and Why Testing Matters

Most sea salt brands show you a beautiful photo of a coastline and tell you their salt is "natural" and "pure." What they almost never show you is a lab report.

That silence is worth paying attention to.

The question no one is asking at the grocery store

When you pick up a bag of sea salt, you're making an assumption: that because it came from the ocean, it's clean. But the ocean absorbs what we put into it — industrial runoff, agricultural chemicals, airborne particles. The salt that crystallizes from seawater carries a record of its environment. And yet the food industry has no federal requirement to test finished sea salt for heavy metals, and no requirement to publish results if they do.

This isn't alarmist. It's just a fact about a regulatory gap — and it means that for most brands, you're taking their word for it.

What the research says about heavy metals in sea salt

Heavy metals enter seawater through natural geological processes and human industrial activity. Studies have detected measurable levels of arsenic, lead, cadmium, and mercury in sea salts from multiple countries. The concern isn't that salt is dangerous — it's that levels vary significantly by source, and consumers have no way to compare because data isn't published.

The metals most commonly found in sea salt research include:

Lead is perhaps the most studied. Analyses of commercial sea salts have found lead concentrations ranging from undetectable to well above 100 ppb depending on origin and processing method. The FDA's action level for lead in candy intended for children is 10 ppb — a useful reference point for scale. For table salt consumed daily, there is no equivalent FDA action level, which is part of why published third-party data matters.

Arsenic occurs naturally in seawater and in coastal sediments. Inorganic arsenic (the more concerning form) has been detected in some sea salts, particularly from certain coastal regions. The WHO's guideline for arsenic in drinking water is 10 ppb — again useful context, though not directly applicable to salt.

Cadmium and mercury appear at lower levels in most sea salt studies but are worth screening for, given their bioaccumulation potential and the absence of mandatory reporting.

The takeaway: not all sea salt is the same, origin matters, and the only way to know what's in a specific product is to test it.

Why brands don't publish this data

There are a few reasons. Testing costs money — a comprehensive heavy metals panel can run several hundred dollars per batch depending on the lab and methodology. Results might be unfavorable. And since no competitor is publishing either, there's no competitive pressure to do so.

But there's a more fundamental issue: most brands don't think of salt as something that needs to be explained. It's salt. It's ancient. It's natural. The marketing writes itself without any data at all.

That framing made more sense before we understood how industrial coastlines work, and before consumers started reading ingredient labels with the same scrutiny they apply to supplements and skincare.

What to look for when evaluating a sea salt

If transparency in food matters to you, here's a practical checklist:

  1. Named origin, not just a region. "Pacific sea salt" tells you almost nothing. A named lagoon, cooperative, or harvest site is traceable.
  2. Third-party testing, not in-house claims. A brand can say "pure" without testing anything. An accredited third-party lab (EMA-accredited, ISO-certified, or equivalent) cannot.
  3. Published results, not just "tested." Any brand can claim it tests its product. The meaningful signal is whether they publish the actual numbers.
  4. Heavy metals panel specifics. Results should include arsenic, lead, cadmium, and mercury at minimum, with detection limits stated.

What we do at Zafra

Zafra Colima Sea Salt is sourced from the Sociedad Cooperativa de Salineros de Colima — a salt cooperative established in 1925 at Laguna de Cuyutlán on Mexico's Pacific coast. Before we brought this salt to market, we commissioned independent heavy metals testing through SGS México, an EMA-accredited laboratory.

The results: arsenic, cadmium, and mercury all came back not detected (below 0.01 mg/kg). Lead was detected at 0.05 mg/kg — 50 ppb.

This is worth understanding in context. Lead is a naturally occurring element in the earth's crust, present at trace levels in coastal sediments and seawater worldwide. Every sea salt contains some measurable amount; a result of zero typically reflects the detection limit of the lab, not the absence of lead in nature. What matters is the level relative to safety thresholds. Our result is 20 times below the EU's legal maximum for salt of 1.0 mg/kg (Regulation 2023/915, Annex I), and consistent with low-contamination sources in published sea salt literature.
