Zafra Colima Sea Salt

Zafra comes from the Cuyutlán lagoon in Colima, Mexico — a volcanic estuary on the Pacific coast. Collected by hand, dried in the open air, and packed in pouches lined with corn starch — no plastic packaging.

Nothing is added. Nothing is processed away. The minerals that form naturally in this water — calcium, magnesium, potassium — stay in your salt. Because nothing has been stripped, the natural mineral content displaces sodium: approximately 30% less sodium per gram than refined table salt.

Salt has been made in Cuyutlán since 1450. The process has not changed.

Before dawn each morning of the harvest, ancient brine is pumped from the subsoil — water recharged by rain filtering down through black volcanic sand, which traps particles and lets minerals pass. At the surface, the water settles into shallow clay-lined beds. Sun and wind take over. Days pass. The water disappears. The crystals remain.

The Sociedad Cooperativa de Salineros de Colima has done this since 1925 — 192 families, most of them generations deep in the same work. They have defended this lagoon against industrial development to keep it possible.

The harvest window is called the zafra. It lasts only a few days each year. What they gather is all there is.

The water that becomes Zafra doesn't come from the open ocean. It is drawn from the subsoil beneath the lagoon — ancient brine, recharged by rain that filters down through black volcanic sand on its way underground. That sand traps particles. The minerals dissolved in the water pass freely through.

Every batch is independently tested for heavy metals — lead, arsenic, cadmium, and mercury — by a certified third-party laboratory.
